Wattles was established in 2000 by Helen and Paul Reynolds: its cider is crafted in 1000 litre batches using fresh, hand picked, unsprayed fruit with minimal intervention: just washed, milled, macerated, pressed. Some of the cider-apple juice is then bottled: the rest fermented, then matured. A carefully selected range of their own Wattles cider apples - 90% Kingston Black with 10% other bitter-sweet apples – are used. Currently, they have a medium dry cider called 'Kingston'. Over the coming years their goal is to produce a range of single orchard juices and ciders that reflect the microclimates and range of apples of each of their five orchards.
Wattles can be found on the A371 Wells to Cheddar road at the top of Easton Hill. Cider and Cider Apple Juice based primarily on new plantings of Kingston Black.
