This book is an excellent primer for anyone wanting to start producing their own cider on a small scale. Starting with a look at apple varieties and the history of cidermaking, its next step is to show you how to build your own cider press! Then it takes you through the processing of apples into juice. The authors seem very fastidious, recommending quartering the apples and cutting out any rotten bits; sounds like a good way to make great cider, despite being somewhat time consuming
Next is chipping the apples in a "scratter", or bashing them with a big log, before loading them into the cider press to make juice. Then comes the business end of things, fermentation. The book explains what to do to get different types of cider, including champagne cider, from your juice, even including some useful flowcharts. It also covers the best way to store your cider, and possibly the most important part of the book, a troubleshooting section lets you know what can go wrong.
Finally the book ends with a useful glossary and a few other useful appendices, including a mention of perry production
All in all this seems like a very useful book for the budding cidermaker.
